Baumann Tavern

When you first meet Amalie Höller - known as Mali - you will have encountered an optimistic bundle of energy full of life. Her vitality, her charming laughter and her warm, brown eyes put people under her spell - it is hard not to feel sympathy for Mali. She is the heart and soul of the Baumannhof in Signat.


She is a passionate cook. Mali likes traditional, simple and original cuisine, all ingredients and products are self-made or taken from nearby farms. Every guest will find something soothing: from the typical South Tyrolean "Marende" (similar to brunch) with Kaminwurzen (local saussage), bacon and cheese, to "Käseknödel" (cheese-dumplings) and other delicacies.


Malis specialty is the homemade "Schlutzkrapfen" with melted butter and chive - formerly a poor-mans dish - which today attracts businessman and politicians from Bolzano, who like to sit in the Baumannhof parlor and enjoy their food. Quality, tradition and nativeness - these are the terms which describe the Baumannhof philosophy. Dinner is a world in itself. Mali`s "Buschenschank" coddles the guests with local and rural specialties.  The excellent wine of the house rounds off that unique experience.
